This isn’t your ordinary salad – forget the ‘green’ stereotype. We trade green for orange, using thinly-shaved carrots as the base for this anything-but-basic salad. And while it doesn’t contain the same look or colours you’re used to, the nutrient content is still excellent. Carrots are a prime source of vitamins A, C, and K, plus we’ll add even more healthy ingredients full of Asian-inspired flavours.
Ginger, fresh scallions, garlic, and cilantro will all play a part in this nutritious salad that can go toe-to-toe with any green salad, taste-wise.
The best part about this salad may not even be the salad (it makes sense). The signature dressing made from the nut butter of your choice is a show-stopper. Peanut, almond, or cashew butter all work well here. Touches of honey and soy sauce just add to the sweet & savoury flavours of the sauce.
