These are so easy to make, it’s hard to find excuses.

I love baking Christmas cookies. It’s actually the one time every year that I break out the ancient cookbooks sitting on the shelf in the kitchen, and dive into my mom’s old recipes.

Sure, the same ones are out there somewhere on the Internet but with the food-stained book I get to review them with all those side notes in her handwriting, and celebrate a few of the delicious things she loved.

My favorite are the holiday shortbread and part of it has to do with all the butter involved. Another draw is the simplicity- how can you go wrong with just three ingredients?

With that in mind, we scoured the Internet and found some other tried-and-true minimal cookie recipes that will help you get through the holidays while impressing everyone but limiting the chaos in your home that we all know the season can easily bring.

Here are 5 cookies recipes with 3 ingredients or less, to help you shine on the big day:

1) Chocolate Drizzled Turtle Cookies

These cookies actually contain more than 3 ingredients, but you only need to buy three things to make them-and they’re delicious- and so they made the list.

Chelsea’s Messy Apron.com has the recipe- you’ll need a package of refrigerated cookie dough, turtle candies and semi-sweet chocolate chips.

2) Shortbread

If you have butter, brown sugar and flour on-hand you’re ready to go. Check out this recipe from Chew Out Loud.com for traditional melt-in-your-mouth shortbread.

3) Coconut Macaroons

Christmas cookies with three ingredients or less are easy to make.

If you love coconut, these are a great nibbler to have on the table. All you need is shredded coconut, eggs and sugar.

4) Palmiers

These French cookies look fancy but thanks to pre-made frozen puff pastry, they’re now extremely simple. 1 sheet of frozen pastry puff, plus your favorite sugar makes for delectable dessert.

Pillsbury has a super-simple recipe for these holiday delights. Yes, it involves using their own prepared peanut butter cookie dough, but who has the time to do everything from scratch? Grab some Pillsbury refrigerated peanut butter cookie dough and a bag of semi-sweet chocolate chips and you’re on the road with this one.
